Fried Stuffed Lotus Root with Ground Pork
1lb (450g) Lotus Root
1/2 lb (250g) Ground Pork
1tsp Sake (Japanese Rice Wine)
1tsp Soy Sauce
1tsp Grated Ginger
2sticks Spring Onion (minced)
2 tbsps Potato Starch 'Katakuriko' (for filling)
1/2 cup Potato Starch 'Katakuriko' (for batter)
Vegetable Oil (for deep frying)
1. In a large bowl, put ground pork, sake, soy sauce, ginger, and spring onion and mix well by hand.
2, Peel the lotus root and slice it into 5mm thick slices. Make 12 pair of slices.
3, Spread the slices on the cutting board and sprinkle the potato starch.
4, Divide the filling into 12 equal pieces and put each onto the slices.
5, Place another slice onto the filling. (the potato starch side facing down)
6, Coat each piece with the potato starch.
7, Heat deep frying oil to 350-375F and fry until golden.
